Brand New Site for Mexican Food

Mexican food is very popular with most people and having the instructions to make your own meals is even better. Trust me Taco Bell is NOT really Mexican food, they try but they miss the mark. There is nothing that compares to learning to make your own with fresh ingredients. In my cookbook, 'South by Southwest', I give instructions on the different peppers and how to roast and use them in recipes. There are a wide variety of peppers, everything from the well know bell pepper and it's mild flavor to the habanero chili pepper for those who are not a stranger to HOT. They all have their place in Mexican cooking or in Tex-Mex recipes that are a staple in the southwest. In 'South by Southwest' I am trying to get you to realize that chili peppers can be added to almost any main dish and several side dishes with the benefit of superior flavor. There is also a huge advantage as a source of vitamins. Chili peppers have more vitamin C than oranges. I know when I use chilies in my cooking I have a much lower incidence of colds and sinus problems. We can all use that. The biggest problem I've had is finding quality green chili peppers in NC. I'm still amused by one of the people at the local farmers market that is growing some really nice peppers, she said she was growing them because there is a market for them but she said, "I have no clue what to do with them". This is part of the reason for the addition of instructions in my book. If you haven't been raised around peppers, learned to roast them and how NOT to end up with "chili fingers" you need some kind of help.
